This Kratos Full-Size Holding and Proofing Cabinet is an affordable solution for safely, securely, and efficiently transporting product. This versatile unit features a holding mode up to 185F and a proofing mode up to 115F. The non-insulated cabinet holds up to 36 sheet pans. The biggest benefit to cabinets capable of both holding and proofing is their versatility, capable of holding cooked foods at safe temperatures until they're ready to serve, and the proofing mode can finish up the baking process, which can be especially beneficial when baking dough. The heating drawer can be removed easily for efficient cleaning and maintenance.
