A healthy school nutrition environment makes it easier for students to make healthy choices by supplying them with nutritious and appealing foods and beverages. Meals must meet federal nutrition standards set by the US Department of Agriculture (USDA) which require a variety of fruits, vegetables, and whole grains; set limits on saturated fat and sodium; and set both minimum and maximum calorie levels.
By 2025, it's estimated that healthy nutritional standards for all foods sold in schools will decrease the number of childhood obesity cases by more than 2 million.

One of the most effective strategies in encouraging healthy choices has been the Farm to School program. This program involves school dining staff engaging students through hands-on activities, including planting, harvesting and preparing items from their own school garden. Through this garden, the school dining staff builds relationships that encourage students to try new foods and make healthy choices. A school garden is the perfect way to get students to make the connection between growing food and proper diet, develop life skills and increase environmental awareness.
Researchers found that students that attend schools with a Farm to School program ate 37% more vegetables and 11% more fruit than the average student consumed before their school adopted the program.
It's one thing to offer students fruits and vegetables for school lunch; it's another for them to actually eat them. Unfortunately consumption of fruit and vegetables among children has fallen below recommended levels.
