This Asian-inspired honesuki knife features a beautiful PakkaWood® handle that is durable and won't harbor bacteria. The double-bevel, flat-ground blade can be hand-sharpened to a razor sharp 16° cutting angle each side. The honesuki knife also has a VG-MAX cutting core that takes an incredible edge and holds it longer. The stainless Damascus cladding has 34 micro-layers of steel each side (68 layers total) to support the core, add stain resistance and help food release from the blade. Plus, the honesuki knife has a lightweight, yet perfectly balanced full composite tang that provides maximum strength.
This honing steel is the easiest way to keep your Shun Classic knives sharp in between daily use. The tool features a beautiful PakkaWood® handle that is durable and won't harbor bacteria. Use the honing steel on a regular basis to maintain your knife's blade. Simply place it tip down on a sturdy surface, line up the blade with the hand guard and gently pull the blade starting from the heel to the tip repeating 3 or 4 times alternating sides.
